Well, based on our experienced, when you first try to setup the Xiaomi Mi Band 8, you will prompted first with the option to change the language right away. There are at least three option for languages, two for the Chinese, I think the other one is a local language, and the other option is the English language.
What will happen if you pick the English language?
Obviously, the overall menus of the Mi Band 8 will change to English language, but there are some options that remain in Chinese. That is the watch faces, for dynamic watch faces, there are some information on the watch face that remains a Chinese word/character. But not all, if you don’t like the Chinese language, you can just pick a watch face that is all English.

Is it possible that there is an update for Mi Band 8, updating it to Global version?
Your Mi Band 8 Chinese version will receive several updates this year, in fact it has already undergone its first update just a week after its initial release. We have the Mi Band 7 Pro Chinese version, and before I was hoping for an update for Global version, but its almost a year not and still my Mi Band 7 Pro Chinese version did not receive any new update to change it to Global version.
Is it worth to buy the Mi Band 8 or wait for the Global version?
